Graded by an independent Ausmeat specialist our cattle consist of BMS 3, BMS 4+, BMS 6+, BMS 8+ and BMS 9+. Ultimus is graded on marble score, fat colour, meat colour, tenderness, yield and various other key factors that determine the quality of the meat. These strict grading procedures are one of the many factors that garantees us consistent quality every time.
Our Brands consist of 100% verified Black Angus, Tajima Japanese Black crossed with a full blood Black Angus and a Purebred Wagyu.
All three brands are fully traceable, registered and certified by the relevant authorities. Raised on land until 16-18 months of age and 400kg live weight before moving on to a state of the art feedlot.
The unique combination of Japanese genetics and Australian breeding techniques results in a beef product that is exceptionally well-marbled, providing a luxurious eating experience.
